Couscous

For couscous, the durum wheat is ground into semolina. This semolina is moistened and rolled into small balls. It is then gently broken down over steam and then dried.

Bulgur

Bulgur represents one of the staple foods in certain parts of the Orient. For bulgur, the durum wheat grains are moistened, steamed, then dried and cut into small pieces as required (fine, medium or coarse).
